Maple Chantilly

1 – 8 oz block cream cheese
¾ cup heavy cream or eagle brand milk
1 cup maple syrup
1 tsp vanilla

Instructions:

Beat cream cheese until light and fluffy. Gradually beat in cream. Stir in maple syrup and vanilla. Chill 3 hours or until set.

 

Rhubarb/Apple Maple Streusel Muffins

Batter

¼ cup maple syrup
1 1/3 cup sour cream
½ cup oil
2 eggs
2 2/3 cups flour
2 cups chopped rhubarb or apple
1 cup maple sugar
1 tsp baking soda
½ tsp salt

Instructions:

Mix together all wet ingredients and set aside. In a large bowl mix together all dry ingredients. Add the chopped fruit to the dry ingredients then stir in wet ingredients and mix until all is moistened. Spoon into greased muffin tins and top with streusel mixture. Bake in a 350 degree oven for 25 – 30 minutes. Will make 12 large muffins.

Topping

½ cup butter
1 cup maple sugar
1 tsp cinnamon
Pinch of salt
1 1/3 cups of flour

Instructions:

Mix together until crumbly.

 

Sweet and Spicy Strawberries

1 pint fresh strawberries
2 Tbsp maple syrup
1 Tbsp balsamic vinegar
1 Tbsp butter
1/8 tsp black pepper

Instructions:

Coarsely chop strawberries and set aside. In a saucepan combine remaining ingredients and cook over medium heat until syrupy. Remove from heat and add strawberries.
This can be served over pound cake, biscuits or ice cream and topped with whipped cream.

Maple Apple Crisp

6 -8 cups peeled and sliced apples
1 cup flour
1 cup oatmeal
1 cup maple sugar (can use brown)
1 cup butter
2/3 cup maple syrup
1 tsp cinnamon

Instructions:

Arrange apples in greased 9×13 baking dish. Drizzle maple syrup and sprinkle cinnamon over the apples. In a medium mixing bowl, combine flour, oatmeal and sugar. Cut in butter until mixture resembles coarse crumbs. Put mixture on top of fruit. Bake at 350 degrees until apples are tender and topping is browned, about 35 – 40 minutes.

 

Cinnamon Bun Muffins

Batter

3 cups flour
2/3 cup white sugar
½ tsp salt
4 pkgs traditional yeast
1 1/3 cups milk
6 TBSP oil
1 tsp vanilla
2 eggs

Instructions:

Mix together flour, sugar and salt. Dissolve yeast in warm milk and let sit 10 minutes. Add oil, vanilla and egg to milk mixture and whisk together. Add wet to dry and mix well until very smooth. Pour into oiled bowl and let rest for 15 minutes.

Filling/Topping

4 Tbsp butter
1 1/3 cup maple sugar
4 Tbsp maple syrup
1 ½ tsp cinnamon
2 pinches cardamom

Instructions:

Combine all together.
Fill greased muffin cups 2/3 full and add a dollop of filling mixture and swirl through batter with a knife. Put into cold oven and turn heat on to 325 degrees. Bake for 17 minutes. Glaze with maple butter.
